Bird’s Nest

These are high grade bird’s nest my dh bought from a dealer.  He got it for less than the cost price.  I was like, “Holy sh!t” when he said he bought a whole box of bird’s nest for  2-3 year’s worth. Bird’s nest can be kept in the fridge for a few years.  We will only make some every 3 months.  My mil said our Malacca house has bird’s nest from his grandmother’s time from the ’50s.  We were like, “we’re not eating that.” It cost him quite a lot of US $$.  My mil showed how to cook it and it turned out very well.  Since these were grade A, we didn’t have to clean it or soak it.  We used 8 pieces in a 2 liter casserole Corning dish and place it in a huge rice cooker that I have and added water around it for the double boiling effect for only 2.5  hours.  The rock sugar was added after 2 hours ofcooking.  It turned out perfect.
